Ingredients

  • 3/4 cup KRAFT* Peanut Spread Chocolate Flavour
  • 3/4 cup sugar
  • 3/4 cup milk
  • 2 eggs
  • 1 zucchini (180-200g)
  • grated
  • 1/2 cup bran soaked in 1/4 cup water
  • 1 1/2 cups self raising flour
  • 2 teaspoons cinnamon
  • icing sugar
  • to dust

Instructions

  1. Whisk together the peanut spread, sugar, milk and eggs in a large bowl.
  2. Add the zucchini and bran and mix until just combined.
  3. Fold through the sifted flour and cinnamon until smooth.
  4. Pour mixture into a lined and greased 22cm x 12cm loaf tin.
  5. Bake at 180C for 1 hour until cooked through.
  6. Allow to cool.
  7. Dust with icing sugar then slice.
