Zesty Lemon Whole Wheat Zucchini Bread

Ingredients

  • 2 cups whole wheat pastry flour (or sub reg ww)
  • 1 cup all-purpose flour
  • unbleached
  • 1 teaspoon salt
  • 12 teaspoon ground nutmeg
  • 2 teaspoons baking soda
  • 12 teaspoon ground cinnamon
  • 1 cup sugar (I use turbinado)
  • 12 cup vegetable oil
  • 1 cup unsweetened applesauce
  • 4 eggs
  • beaten
  • 2 teaspoons vanilla
  • 13 cup lemon juice
  • fresh
  • 2 cups zucchini
  • grated
  • 3 teaspoons lemon zest
  • 34 cup walnuts
  • chopped

Instructions

  1. Preheat oven to 350F
  2. In a large bowl, combine flours, salt, nutmeg, baking soda, cinnamon and sugar.
  3. In a separate bowl, combine oil, eggs, water, applesauce, zucchini, vanilla, lemon zest and lemon juice.
  4. Mix wet ingredients into dry, add nuts and fold together.
  5. Bake in 2 standard loaf pans, sprayed with nonstick spray, for 50 minutes to 1 hour, or until a tester comes out clean.
  6. Alternately, bake in 5 mini loaf pans for about 45 minutes.
