Ingredients
- 1 tablespoon butter
- 13 cup orzo pasta
- 2 scallions
- thinly sliced (including tops)
- 1 cup long grain rice
- 1 (14 1/2 ounce) can reduced-sodium chicken broth
- 12 cup water
- salt
- pepper
Instructions
- Melt butter in medium sauce pan over medium high heat.
- Add orzo and saute until golden brown.
- Add scallions and saute quickly (a minute or so).
- Add chicken broth, water, salt & pepper (to taste).
- Bring to a boil.
- Stir in rice.
- Reduced heat to low.
- Cover and cook for 17-20 minutes.
- I finished by adding a little extra butter and salt and pepper to taste.
