Ingredients
- 5 teaspoons unsalted butter
- 1 apple
- peeled
- cored
- and finely chopped
- 2 teaspoons sugar
- 34 low-fat buttermilk
- 14 cup Egg Beaters egg substitute
- 1 cup flour
- 13 cup whole wheat flour
- 1 12 teaspoons baking powder
- 34 teaspoon baking soda
- 34 teaspoon salt
- 12 teaspoon nutmeg
- 12 cup fat-free cottage cheese
Instructions
- Melt 2 tsp butter in nonstick skillet over med.
- heat.
- Add apple and sugar.
- Cook, stirring, for 5 minutes.
- Transfer to a small bowl and let cool 5 minutes.
- Heat 3 tsp butter in microwave until melted.
- Whisk melted butter, buttermilk, and egg in large bowl; set aside.
- Combine flour, baking powder, baking soda, salt and nutmeg in another large bowl.
- Add flour to milk misture, stirring just until blended.
- Stir in apple and cottage cheese.
- Spray nonstick skillet with cooking spray and set over medium heat.
- Pour in batter by 1/4 cupfuls.
- Cook 3 minutes per side.
