Wild Greens and Shrimp W/ Cucumber Yogurt Dressing
Ingredients
- 1 bell pepper
- seeded and chopped
- 3 green onions
- chopped
- 1 English cucumber
- chopped and seeded
- 1 cup plain yogurt
- 1 tablespoon canola oil
- 1 tablespoon fresh lemon juice
- sea salt
- fresh ground black pepper
Instructions
- Dressing: Blend and puree ingredients until smooth.
- Adjust salt and pepper to taste.
- Salad: Combine greens, shrimp, and parsley in salad bowl.
- Add dressing to salald and toss lightly.
