Ingredients

  • 1 (1/4 ounce) package dry yeast
  • 14 cup sugar
  • 1 egg
  • 2 cups warm water
  • 34 cup butter
  • melted
  • 1 teaspoon salt
  • 2 cups self-rising flour
  • 2 cups whole wheat flour

Instructions

  1. Put yeast in warm water with a little sugar and flour to proof.
  2. Melt butter.
  3. Add egg, salt, and yeast mixture, beat well, and stir in flour.
  4. Cover with towel, let rise for 2-3 hours in warm place.
  5. Batter can be kept in refrigerator for a few days, and baked fresh as needed.
  6. Spoon into small greased muffin tins and bake at 350 until golden.
