Ingredients

  • 1 cup wheat flour
  • 14 cup Splenda sugar substitute
  • 1 14 teaspoons baking powder
  • 14 teaspoon baking soda
  • 14 teaspoon salt
  • 1 cup low-fat buttermilk
  • 14 cup egg substitute
  • 14 cup low-fat margarine
  • melted
  • 34 cup fresh blueberries or 34 cup frozen blueberries

Instructions

  1. Mix first five ingredients in a bowl until well combined.
  2. Mix Egg Beaters and buttermilk and slowly stir into the dry mix.
  3. Stir in melted butter.
  4. Heat a non-stick skillet or griddle to medium heat.
  5. Pour 1/4 cup of the batter onto hot skillet.
  6. Add blueberries (as many as you'd like) and press down slightly to get them to cook into the batter).
  7. Cook for 2 minutes on both sides.
  8. Repeat with remaining batter, and EAT.
