Ingredients
- 750 g tomatoes
- diced
- 1 medium red onion
- diced finely
- 1 red chili
- deseeded and finely chopped
- 1 green capsicum
- deseeded and chopped
- 4 garlic cloves
- peeled and finely chopped
- 1 (400 g) can cannellini beans
- 1 pinch sugar
- 4 tablespoons olive oil (good quality)
- 1 lemon
- zest of
- 1 lemon
- juice of
- 1 tablespoon apple cider vinegar
- italian parsley (to garnish)
Instructions
- Toss together tomatoes through to pinch of sugar.
- Taste for seasoning and adjust as necessary.
- Add Olive oil through to vinegar and toss until well coated.
- Chill and serve garnished with parsley.
