Ingredients

  • 1 1/2 cups pistachios
  • toasted
  • 1/3 cup good olive oil
  • 1/3 cup lemon juice
  • 1/2 cup water
  • 1 clove of garlic
  • grated
  • 2 teaspoons kosher salt
  • 2 teaspoons ground coriander
  • 1 cup lentils
  • cooked
  • with their liquid
  • 1 cup parsley
  • finely chopped
  • 1/4 cup sprouted lentils (optional garnish)

Instructions

  1. Pulse the pistachios in a food processor until a fine consistency.
  2. Add the olive oil, lemon juice, water, garlic, salt and coriander and pulse to combine.
  3. Add the lentils and parsley and pulse to combine.
  4. Taste and adjust seasoning.
