Ingredients
- 3 cups Watermelon
- Chopped
- 1/2 cups Diced Red Bell Peppers
- 1/2 cups Diced Red Onion
- 1/4 cups Chopped Cilantro
- 1- 1/2 Tablespoon Diced Fresh Jalapenos
- Seeds Removed
- 1- 1/2 cup Chopped Shrimp
- Tails Removed
- 1/2 cups Lemon Juice
- 2 teaspoons Kosher Salt
- 1 teaspoon Black Pepper
- 1 Tablespoon Chopped Basil
- 1/2 teaspoons Sriracha
- 2 pounds Corn Chips
- 1 head Boston Lettuce
Instructions
- Put all the ingredients (except the chips and lettuce) in a large bowl and mix until combined.
- Allow to chill for at least an hour before serving.
- Serve on a bed of lettuce beside chips for dipping.
