Watermelon Air with Sea Urchin (Aire de Sandia con Erizos de Mar)
Ingredients
- 1 1/2 cups watermelon juice
- 1 teaspoon soy lecithin
- Sea urchin
- Spanish extra-virgin olive oil
- Juice of 1 lime
Instructions
- Combine the watermelon juice with the lecithin.
- Mix with a hand blender, tilting the bowl to incorporate air.
- Put the sea urchin in shallow bowls.
- Dress with olive oil and lime juice and top with the watermelon mixture.
