Ingredients
- 2 whole Steaks
- 1 whole Ripe Mango
- 3 Tablespoons Olive Oil
- Divided
- 1/4 cups Sweet Onion
- Diced
- 1 whole Red Bell Pepper
- Diced
- 2 pinches Kosher Salt
- 1 pinch Pepper
- 1/4 cups Cilantro
- Chopped
- 6 slices Bread Of Choice
Instructions
- Salt and pepper each side of the steak and grill on medium-high heat for 6 minutes on each side or until desired doneness is reached.
- Meanwhile, peel and slice your mango into chunks.
- Puree half of the mango in a food processor.
- Drizzle 1 Tablespoon of olive oil in a pan and saute the onion and bell pepper with a pinch of salt and pepper.
- The peppers should start to char a little.
- Remove the steaks from the grill and tent with foil.
- Drizzle olive oil over bread and grill on each side.
- Turn the pepper/onion mixture down to medium-low and add the sliced mangoes and the puree.
- Cook for 1 minute.
- Remove from heat, add chopped cilantro and toss together.
- Put together the sandwich (bread, sliced steak, topped with salsa and another piece of bread) and enjoy!
