Ingredients

  • 375 grams unsalted whole cashew nuts
  • 1 1/2 tbsp extra virgin olive oil
  • 1 tbsp freshly chopped rosemary
  • 1 tbsp freshly chopped thyme
  • 1 tsp salt
  • 1 freshly ground black pepper to taste

Instructions

  1. Preheat the oven to gas 5 / 190C / 375F and line a baking tray with foil
  2. Toss all the ingredients together on the tray and spread out into an even layer
  3. Roast for 10 - 12 minutes until golden
  4. Shake and let cool on the tray then serve
  5. Other seasonings work just as well.
  6. Try using paprika, garlic and basil, cajun spice etc
