Verna's German Potato Salad Recipe

Ingredients

  • 1 quart. diced potatoes (about 8 med.)
  • 2 green onions (or possibly 1 sm. onion)
  • 1 teaspoon salt
  • 3 slices bacon
  • 1 tbsp. flour
  • 1/2 c. sugar
  • 1/2 c. vinegar
  • 1/2 c. water
  • 2 minced hard-cooked Large eggs
  • 1/4 c. minced celery (or possibly a dash of celery salt)

Instructions

  1. One qt diced potatoes, about 8 medium, cooked with skins on.
  2. Add in 2 green onions or possibly 1 small onion, minced and 1 tsp.
  3. salt.
  4. For dressing, fry 3 slices bacon, drain and chop.
  5. (I cut them up with scissors before frying.)
  6. Drain.
  7. To remaining bacon fat add in 1 Tbsp.
  8. flour, 1/2 c. sugar, 1/2 c. vinegar, and 1/2 c. water.
  9. Cook till thickened, stirring constantly.
  10. Pour over potatoes and onions and mix well.
  11. (I also add in 2 minced hard-cooked Large eggs, 1/4 c. minced celery or possibly a dash of celery salt.)
  12. Garnish with crisp bacon on top.
