Venison Italian Style Recipe

Ingredients

  • 1 pound thinly sliced venison
  • Flour
  • Oil
  • 1 lg. onion
  • minced
  • 6 slices bacon
  • sliced into large pcs
  • 4 sm. cans tomato puree
  • 1 clove garlic
  • crushed
  • 1 green pepper
  • minced
  • 1/2 c. red wine
  • 1/2 c. beef stock
  • 1 teaspoon rosemary (fresh if possible)
  • Salt and pepper to taste
  • 4 ounce. sliced mushrooms
  • sauteed in butter
  • 10 black olives
  • 4 1/2 ounce. thinly sliced Mozzarella cheese

Instructions

  1. Coat the meat with flour and brown in warm oil; remove to a casserole dish.
  2. Brown the onion and bacon; add in tomato puree, garlic, green pepper, wine, stock, rosemary, and seasoning.
  3. Pour this over the meat.
  4. Cover and cook at 325 degrees for 2 hrs.
  5. Ten min before serving, add in the sauteed mushrooms and olives; place the cheese on top.
  6. Place under the broiler till cheese is melted.
  7. Serve with noodles or possibly rice.
