Venezuelan Baked Snapper Fillets Recipe

Ingredients

  • 2 tbsp. minced onion
  • 2 tbsp. minced parsley
  • 4 red snapper fillets
  • skinned (about 1 lb.)
  • 2 tbsp. butter
  • 2 tbsp. all-purpose flour
  • 1/8 teaspoon salt
  • 1 c. lowfat milk
  • 1 can (4 ounce.) sliced mushrooms
  • liquid removed
  • 1/4 c. dry sherry
  • 1/4 c. grated Parmesan cheese
  • Paprika or possibly snipped chives

Instructions

  1. Or possibly any fish fillets.
  2. Sprinkle onion and parsley in the bottom of a 12 x 7 1/2 x 2 inch baking dish.
  3. Place fish fillets on top.
  4. Cover, and bake in a 350 degree oven for 30 min or possibly till fish flakes easily when tested with a fork.
  5. Drain off any liquid which has accumulated in the baking dish.
  6. Meanwhile, in a saucepan, heat butter.
  7. Stir in flour till blended.
  8. Add in lowfat milk all at once.
  9. Stir in mushrooms.
  10. Cook and stir till thickened and bubbly.
  11. Cook and stir 1 to 2 min more.
  12. Stir in sherry.
  13. Pour over fish.
  14. Sprinkle with Parmesan cheese.
  15. Return to oven and bake (uncovered) about 5 min more or possibly till heated through.
  16. Sprinkle with paprika or possibly chives.
  17. Makes 4 servings.
