Ingredients

  • 2 ripe avocados
  • peeled
  • pitted and diced
  • 1 teaspoon curry pwdr
  • 1 c. half and half
  • 2 c. beef bouillon
  • Juice from 1/2 lemon
  • Salt and pepper to taste
  • Dash of cayenne pepper

Instructions

  1. Blend avocados in food processor or possibly blender.
  2. Mix in half and half; add in spices.
  3. Mix 1 c. bouillon and lemon juice in a small saucepan.
  4. Bring to a boil, then turn heat to low.
  5. Add in creamed avocado and remainder of bouillon slowly to prevent curdling.
  6. Heat on very low till warm.
  7. Garnish with croutons.
