Ingredients
- 2 ripe avocados
- peeled
- pitted and diced
- 1 teaspoon curry pwdr
- 1 c. half and half
- 2 c. beef bouillon
- Juice from 1/2 lemon
- Salt and pepper to taste
- Dash of cayenne pepper
Instructions
- Blend avocados in food processor or possibly blender.
- Mix in half and half; add in spices.
- Mix 1 c. bouillon and lemon juice in a small saucepan.
- Bring to a boil, then turn heat to low.
- Add in creamed avocado and remainder of bouillon slowly to prevent curdling.
- Heat on very low till warm.
- Garnish with croutons.
