Ingredients
- 100 g cooked basmati rice (they used 90 second microwave rice)
- 15 g mixed salad greens (1 cup)
- 1 lebanese cucumber (peeled into long ribbons using vegetable peeler)
- 1 carrot (small grated)
- 4 cherry tomatoes (halved)
- 2 button mushrooms (quartered)
- 95 g tuna in water (drained)
- 2 teaspoons balsamic vinegar
- 1 teaspoon extra virgin olive oil
- mustard powder (a pinch)
- fresh ground black pepper
Instructions
- Put rice in a medium container.
- Combine salad leaves, cucumber, carrot, tomato and muchrooms and add to the rice and then the tuna.
- Dressing - put the vinegar, oil and mustard powder in a small container and season with pepper, cover and shake.
- Pour the dressing over just before serving.
