Ingredients
- 1 clove garlic
- halved
- 1 head lettuce
- torn in pcs
- 3 tomatoes
- quartered
- 1 cucumber
- peeled and sliced
- 1 red onion
- sliced
- 3 celery stalks
- diced
- 1 green pepper
- minced
- 6 radishes
- sliced
- 1 carrot
- shredded
- 2 tbsp. minced parsley
- 1/2 c. extra virgin olive oil
- 1/4 c. red wine vinegar
- 1 1/2 tbsp. fresh lemon juice
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/2 teaspoon freshly grnd pepper
- 1 pound feta cheese
- crumbled
- 12-14 Kalamata olives
Instructions
- Rub interior of wooden salad bowl with garlic.
- Throw away garlic.
- Add in lettuce, tomatoes, cucumber, onion, celery, bell pepper, radishes, carrot and parsley to bowl.
- Toss lightly.
- combine extra virgin olive oil, vinegar, lemon juice, oregano, salt, and pepper in jar with tightly fitting lid and shake well.
- Pour over salad and toss to coat.
- Add in cheese and olives, and toss again.
