Ingredients
- 3 -4 san marzano tomatoes
- cut in quarters lengthwise
- 1 small crookneck yellow squash
- thinly sliced
- 1 banana pepper
- seeded and sliced
- 1 medium purple bell pepper
- seeded
- membrane removed and sliced
- 1 lemon cucumber
- sliced
- 1 tablespoon extra virgin olive oil
- 2 tablespoons orange muscat champagne vinegar
- 12 tablespoon lavender honey
- softened
- salt
- to taste
- cracked black pepper
- to taste
- fresh lavender
- sprigs
Instructions
- Assemble the vegetables on a platter.
- Whisk together the vinaigrette and pour over the vegetables.
- Set aside to marinate for about 15-30 minutes.
- Garnish with lavender sprigs.
