Ingredients
- 1 onion
- chopped
- 1 carrot
- grated Target 2 lb For $3.00 thru 02/06
- 1 small red capsicum
- chopped
- 1/2 cup frozen peas
- 1 tablespoon VEGEMITE
- 1 cup cooked rice
- 1 tablespoon KRAFT* Grated Parmesan Cheese
- 2 tablespoons tomato paste or pasta sauce
- 9 sheets filo pastry
- 1/2 cup butter
- melted
- KRAFT* Grated Parmesan Cheese
- extra
Instructions
- Heat a little oil in a frying pan and cook onion until soft.
- Add carrot, red capsicum, and peas, cook a further 2 minutes.
- Remove from heat and stir in Vegemite, rice, parmesan cheese and tomato paste.
- Layer 3 sheets of pastry together, brushing each with melted butter.
- Repeat process with remaining 6 sheets of pastry.
- Cut buttered pastry crossways into 6 equal strips.
- Place a tablespoonful of mixture at the end of each rectangular strip of pastry.
- Fold bottom right hand corner over to the left edge to form a triangle, continue to fold up triangular style the length of the pastry.
- Brush the top with butter and sprinkle with extra Parmesan cheese.
- Bake at 210C for 20-25 minutes or until golden.
