Ingredients

  • 1 onion
  • chopped
  • 1 carrot
  • grated Target 2 lb For $3.00 thru 02/06
  • 1 small red capsicum
  • chopped
  • 1/2 cup frozen peas
  • 1 tablespoon VEGEMITE
  • 1 cup cooked rice
  • 1 tablespoon KRAFT* Grated Parmesan Cheese
  • 2 tablespoons tomato paste or pasta sauce
  • 9 sheets filo pastry
  • 1/2 cup butter
  • melted
  • KRAFT* Grated Parmesan Cheese
  • extra

Instructions

  1. Heat a little oil in a frying pan and cook onion until soft.
  2. Add carrot, red capsicum, and peas, cook a further 2 minutes.
  3. Remove from heat and stir in Vegemite, rice, parmesan cheese and tomato paste.
  4. Layer 3 sheets of pastry together, brushing each with melted butter.
  5. Repeat process with remaining 6 sheets of pastry.
  6. Cut buttered pastry crossways into 6 equal strips.
  7. Place a tablespoonful of mixture at the end of each rectangular strip of pastry.
  8. Fold bottom right hand corner over to the left edge to form a triangle, continue to fold up triangular style the length of the pastry.
  9. Brush the top with butter and sprinkle with extra Parmesan cheese.
  10. Bake at 210C for 20-25 minutes or until golden.
