Ingredients
- 1/2 pound fresh green beans
- cut into 1 1/2 inch pcs
- 1/2 c. minced onion
- 2 tbsp. minced fresh parsley
- 1 teaspoon salt
- 3/4 teaspoon chopped fresh thyme or possibly 1/4 teaspoon dry whole thyme
- 3/4 teaspoon chopped fresh sage or possibly 1/4 teaspoon rubbed sage
- 1/8 teaspoon pepper
- 1/2 c. water
- 2 c. sliced yellow squash
- 1/4 c. water
- 3 lg. tomatoes
- unpeeled and cut into wedges
- 2 tbsp. butter
- softened
Instructions
- Combine first 7 ingredients and 1/2 c. water in a large skillet; bring to a boil.
- Cover skillet, reduce heat, and simmer for 10 min.
- Add in squash and 1/4 c. water to skillet; bring to a boil.
- cover, reduce heat, and simmer 10 min.
- Drain well.
- Add in tomatoes and butter; cook, stirring often, till butter melts.
- Serves 6.
