Ingredients

  • 1/2 pound fresh green beans
  • cut into 1 1/2 inch pcs
  • 1/2 c. minced onion
  • 2 tbsp. minced fresh parsley
  • 1 teaspoon salt
  • 3/4 teaspoon chopped fresh thyme or possibly 1/4 teaspoon dry whole thyme
  • 3/4 teaspoon chopped fresh sage or possibly 1/4 teaspoon rubbed sage
  • 1/8 teaspoon pepper
  • 1/2 c. water
  • 2 c. sliced yellow squash
  • 1/4 c. water
  • 3 lg. tomatoes
  • unpeeled and cut into wedges
  • 2 tbsp. butter
  • softened

Instructions

  1. Combine first 7 ingredients and 1/2 c. water in a large skillet; bring to a boil.
  2. Cover skillet, reduce heat, and simmer for 10 min.
  3. Add in squash and 1/4 c. water to skillet; bring to a boil.
  4. cover, reduce heat, and simmer 10 min.
  5. Drain well.
  6. Add in tomatoes and butter; cook, stirring often, till butter melts.
  7. Serves 6.
