Ingredients

  • 1 (14 ounce) can coconut milk
  • high-quality
  • 2 g coconut vinegar
  • 6 g sugar
  • 4 g salt
  • 6 g agar-agar

Instructions

  1. Whisk all ingredients in a sauce pan until dissolved.
  2. Turn on heat and increase slowly, allowing it to simmer for 2-3 minutes.
  3. Remove from heat and pour into a shallow container.
  4. Allow the mixture to set.
  5. Once set, puree in a food processor.
  6. Set aside for 24 hours.
  7. The coconut milk mixture should begin to weep from vinegar and begin to look like ricotta cheese.
