Vegan Rancheros Spaghetti

Ingredients

  • 12 ounces spaghetti
  • 1 1/2 cups corn Mexican or whole kernel corn
  • frozen
  • 1 2/2 cups black beans canned
  • rinsed and drained
  • 1 tablespoon olive oil
  • 1 x cayenne pepper
  • 1 x sea salt
  • 1 1/2 cups salsa plus more for garnish if desired or make your own as i did for this recipe!
  • 1/2 cup scallions
  • spring or green onions for garnish
  • chopped

Instructions

  1. In a large pot, bring salted water to boil and add few drops of olive oil and spaghetti.
  2. Toss slightly and remove from heat!!
  3. The water will cook the pasta and leaving the starch in tact..for easy digestion.
  4. The water should be clear!
  5. You might need to toss once before draining pasta water!
  6. Note: the hot water can overcook the pasta!!
  7. ..so check often!

  9. Meanwhile, in a heated large pan, add black beans and corn.
  10. Season with salt and pepper as needed.
  11. When spaghetti is finished cooking.
  12. Drain spaghetti Reserving a cup of pasta water.
  13. Add to beans and corn.
  14. Add salsa, tossing to coat.
  15. Add pasta water if needed.
  16. Divide pasta onto 4 serving plates.
  17. Garnish with additional salsa and green onions.
  18. Serve and enjoy!
