Vegan Pitas (Healthy and Kid-Friendly!)

Ingredients

  • 2 loaves whole wheat pita bread (I like Toufayan Bakeries)
  • 10 grapes (cut in half or diced
  • depending on size)
  • 12 apple
  • diced
  • 12 cucumber
  • diced
  • 14 cup nuts
  • i like mine chopped
  • 14 cup raisins
  • 18 cup sunflower seeds
  • 1 stalk celery
  • diced
  • 2 cups lettuce
  • 2 cups Baby Spinach
  • fresh uncooked
  • 2 Morningstar Farms grillers
  • chikn veggie patties", "14-12 cup vegan mayonnaise (I like Veganaise)

Instructions

  1. Cook veggie chicken patties (I use the microwave for about two minutes to two and a half minutes for two patties.)
  2. Set aside to cool.
  3. Dice all vegetables, fruit, and veg chicken patties according to how chunky you want your sandwich and place in a big bowl.
  4. Add veganise to the veggies and fruit and mix well.
  5. (I usually leave the lettuce and spinach out of the veganaise mix.
  6. ).
  7. Slice the pita bread into halves to make 4 pockets.
  8. Warm the bread slightly.
  9. This seems to make it a little more elastic when stuffing it.
  10. I find about 15-25 seconds in the microwave does the trick.
  11. Put chopped lettuce and spinach in the bottom.
  12. Add the veggie/fruit mix to the pita pockets and top off with a little more lettuce and spinach.
