Ingredients
- 1 pound ground beef
- 1/2 pound ground veal
- 1/2 pound ground pork
- 2 eggs
- 1/2 cup fine bread crumbs
- 3/4 cup chopped parsley
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 cup chopped green pepper (optional)
- 1 1/2 teaspoons salt
- 1/2 teaspoons freshly ground black pepper
- 3 or 4 strips bacon
Instructions
- Preheat the oven to 350 degrees.
- Place all the ingredients except the bacon in a bowl.
- Briefly blend well and form into a loaf.
- Place the loaf on a rack in a 10-inch baking pan and cover with the bacon slices.
- Bake for 1 1/2 hours until the meatloaf is firm and the bacon browned.
- Let the meatloaf rest for 10 to 15 minutes.
