Veal, Pork And Chicken Granny's Meatloaf

Ingredients

  • 1 pound ground beef
  • 1/2 pound ground veal
  • 1/2 pound ground pork
  • 2 eggs
  • 1/2 cup fine bread crumbs
  • 3/4 cup chopped parsley
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 cup chopped green pepper (optional)
  • 1 1/2 teaspoons salt
  • 1/2 teaspoons freshly ground black pepper
  • 3 or 4 strips bacon

Instructions

  1. Preheat the oven to 350 degrees.
  2. Place all the ingredients except the bacon in a bowl.
  3. Briefly blend well and form into a loaf.
  4. Place the loaf on a rack in a 10-inch baking pan and cover with the bacon slices.
  5. Bake for 1 1/2 hours until the meatloaf is firm and the bacon browned.
  6. Let the meatloaf rest for 10 to 15 minutes.
