Instructions
- Spray large nonstick skillet with cooking spray.
- Add chicken and onions; cook on medium heat until chicken is cooked through (170F), stirring occasionally.
- Add beans, salsa, tomatoes, dressing, olives, jalapeno peppers and seasonings; stir.
- Cook until heated through, stirring occasionally.
- For each serving: Place 1 cup of the lettuce in serving bowl.
- Top with 1/2 cup of the chicken mixture and 2 Tbsp.
- each of the cheese and crushed chips.
