Ingredients
- 4 ounce. fresh turkey
- sliced & pounded
- 4 ounce. cornbread
- 1 ounce. Brunoise carrot
- celery
- onion & bacon
- 6 pc. oysters
- 1 ounce. fresh minced sage
- 1 each egg yolk
- Salt & pepper to taste
- 1 c. chicken stock
- 2 ounce. giblet gravy
Instructions
- Saute/fry bacon; add in onion, carrot, celery; add in 4 pcs minced oysters; add in cornbread which has been crumbled.
- Add in chicken stock and sage, add in egg yolk.
- Cold down the stuffing before rolling into turkey.
- Tie with twine.
- Season with salt and pepper and brown in a saute/fry pan.
- Finish the cooking in a 350 degree oven for 12 min.
- Slice and arrange on giblet gravy.
- Garnish with poached oysters.
