Ingredients
- 2 Tbsp butter
- 2 Tbsp Olive Oil
- 4 onions
- chopped
- 2 celery stalks
- chopped
- 4 carrots
- peeled and sliced (about 1/2 inch thick)
- 4 potatoes peeled and cut into 1 inch cubes
- 1/3 cup all purpose flour
- 6 cups chicken stock
- 1 Tbsp soy sauce
- 1/2 tsp dried marjoram
- 1.5-2 pounds of turkey breast
- cubed
- 2 green bell peppers and/or 2 zucchini
- diced
Instructions
- Melt butter and oil in a large stew pot over medium heat.
- Place onions in pot and saute till tender, about 4 minutes.
- Stir in celery and carrots, and cook until tender.
- Stir in potatoes and flour.
- Pour in chicken stock and soy sauce.
- Add marjoram.
- Place turkey in pot and bring to a boil.
- Reduce heat to low, cover, and simmer 30 min.
- Mix the green pepper and/or zucchini into the pop and continue cooking 10 minutes.
- Taste and adjust for seasoning.
