Ingredients
- 2 pieces Focaccia Rolls
- Split In Half Horizontally
- 3 Tablespoons Basil Pesto
- 1/4 pounds Turkey Cold Cuts
- 1/4 cups Roasted Red Peppers
- 1/2 whole Tomato
- Sliced
- 2 ounces
- weight Pepper Jack Cheese
- Sliced
Instructions
- Split the focaccia rolls in half horizontally and spread pesto on the cut sides.
- Place the bottom half of each roll, pesto side up, on your work surface.
- Split up topping between both sandwiches and layer them on top of the bottom bread pieces.
- Top with the other bread pieces.
- Heat a grill pan over medium heat and spray with cooking spray.
- Add sandwiches onto the hot grill pan and place a large heavy pan on top of the sandwiches to press them down (a Dutch oven is perfect).
- Cook for several minutes on the first side, until nicely browned.
- Flip them over and repeat to brown the other side.
- Serve hot!
