Tomato-Tarragon Topping

Ingredients

  • 1 teaspoon olive oil
  • 1/2 cup onions finely chopped
  • 1/4 cup celery finely chopped
  • 1 1/2 cup tomatoes plum
  • seeded
  • diced
  • 1 1/2 teaspoon tarragon leaves fresh
  • chopped
  • 1/4 teaspoon salt
  • 18 teaspoon black pepper
  • 1 tablespoon lemon juice fresh

Instructions

  1. Heat oil in a large nonstick skillet over high heat.
  2. Add onion and celery; saute 1 minute.
  3. Add tomato; saute 1 1/2 minutes or until tender.
  4. Remove from heat; stir in tarragon and remaining ingredients.
  5. Serve over halibut or cod.
  6. Yield 1 1/4 cups.
