Ingredients
- 1 teaspoon olive oil
- 1/2 cup onions finely chopped
- 1/4 cup celery finely chopped
- 1 1/2 cup tomatoes plum
- seeded
- diced
- 1 1/2 teaspoon tarragon leaves fresh
- chopped
- 1/4 teaspoon salt
- 18 teaspoon black pepper
- 1 tablespoon lemon juice fresh
Instructions
- Heat oil in a large nonstick skillet over high heat.
- Add onion and celery; saute 1 minute.
- Add tomato; saute 1 1/2 minutes or until tender.
- Remove from heat; stir in tarragon and remaining ingredients.
- Serve over halibut or cod.
- Yield 1 1/4 cups.
