Tomato Basil Frittata with Herbed Goat Cheese

Ingredients

  • 3 whole Eggs
  • 5 whole Egg Whites
  • 3 Tablespoons Water
  • 13 cups Fresh Basil
  • Chopped
  • 1/2 teaspoons Kosher Salt
  • 1/4 teaspoons Black Pepper
  • 2 whole Heirloom Tomatoes
  • Thinly Sliced
  • 2 ounces
  • weight Store Bought Herb Goat Cheese

Instructions

  1. Heat oven to broil.
  2. Spray a 10-inch cast iron skillet or other oven-safe skillet with cooking spray and heat it over medium high heat.
  3. In a large bowl whisk together the eggs, egg whites, water, basil, salt and pepper.
  4. Pour the eggs into the skillet and cook for about 3 minutes.
  5. Arrange the sliced tomatoes and crumbled goat cheese on top of the eggs.
  6. Place the skillet in the oven and broil the frittata for another 3-5 minutes, or until the eggs are set and golden on top.
  7. Remove from the oven and serve immediately or at room temperature.
