Ingredients
- 3 whole Eggs
- 5 whole Egg Whites
- 3 Tablespoons Water
- 13 cups Fresh Basil
- Chopped
- 1/2 teaspoons Kosher Salt
- 1/4 teaspoons Black Pepper
- 2 whole Heirloom Tomatoes
- Thinly Sliced
- 2 ounces
- weight Store Bought Herb Goat Cheese
Instructions
- Heat oven to broil.
- Spray a 10-inch cast iron skillet or other oven-safe skillet with cooking spray and heat it over medium high heat.
- In a large bowl whisk together the eggs, egg whites, water, basil, salt and pepper.
- Pour the eggs into the skillet and cook for about 3 minutes.
- Arrange the sliced tomatoes and crumbled goat cheese on top of the eggs.
- Place the skillet in the oven and broil the frittata for another 3-5 minutes, or until the eggs are set and golden on top.
- Remove from the oven and serve immediately or at room temperature.
