Tomatillo Chia Salad

Ingredients

  • 2 tbsp chia seeds
  • 1 cucumber peeled and diced
  • 3/4 lb fresh tomatillo
  • husks removed and diced
  • 2 heaping tblsn fresh cilantro
  • 1/4 cup diced white onion
  • 2 clove garlic
  • minced
  • 1 jalepeno pepper
  • de-seeded and minced
  • 1/4 tsp sea salt

Instructions

  1. Use a food processor to pulse ingredients into a chunky salsa, or chop and mix by hand.
  2. Refrigerate for a minimum 30 minutes to allow flavors to develop and chia seeds to absorb some of the excess liquid.
  3. Serve with chips or crackers, or tuck inside a wrap, burrito or pita.
  4. Makes about two cups.
