Three-Cheese Polenta Pizza

Ingredients

  • 2 tsp. olive oil
  • 1 package precooked polenta
  • 1 c. ricotta cheese
  • 1/2 c. mozzarella cheese
  • 1/4 c. Parmesan cheese
  • 1/2 tsp. salt
  • 1/2 tsp. ground black pepper
  • 1/2 c. loosely packed fresh basil leaves
  • 8 medium plum tomatoes

Instructions

  1. In nonstick 12-inch skillet, heat oil over medium-high heat until hot.
  2. Arrange polenta slices in even layer in skillet and cook until lightly browned on both sides, about 15 minutes.
  3. Meanwhile, in medium bowl, mix ricotta, mozzarella, Parmesan, 1/4 tsp.
  4. salt and pepper until blended.
  5. Reserve 1 Tbsp.
  6. sliced basil for garnish.
  7. In another medium bowl, toss tomatoes with remaining basil and 1/4 tsp.
  8. salt.
  9. Reduce heat to medium; spoon cheese mixture over polenta slices in skillet and top with tomato mixture.
  10. Cover skillet and cook until hot and cheese has melted, about 5 minutes.
  11. Sprinkle with reserved basil.
