Ingredients
- 1 can (15 Oz. Can) Shoepeg Corn Drained
- 1 can (15 Oz. Can) Black Eyed Peas
- Drained
- 2 whole Avocados
- Diced
- Or More If Desired
- 1 bunch Cilantro
- Chopped
- 12 whole Grape Tomatoes
- Quartered
- 3 whole Green Onions
- Chopped
- 1/4 cups Olive Oil
- 1/4 cups Red Wine Vinegar
- 2 cloves Garlic
- Minced
- 3/4 teaspoons Salt
- 18 teaspoons Pepper
- 1 teaspoon Cumin
Instructions
- Combine corn, black-eyed peas, avocados, cilantro, tomatoes, and green onions in a bowl.
- In a separate bowl or shaker, combine olive oil, red wine vinegar, garlic, salt, pepper, and cumin.
- Mix well and pour over the salsa.
- Serve with your favorite chips or crackers.
