Ingredients

  • 4 cups uncooked macaroni
  • 3 cups skim milk
  • hot
  • 12 cup hot water
  • 12 cup margarine
  • 12 cup flour
  • 2 teaspoons Worcestershire sauce
  • 2 tablespoons cajun seasoning
  • 1 12 cups cubed Velveeta cheese
  • 1 12 cups cubed low fat old cheddar cheese
  • salt and pepper

Instructions

  1. Melt margarine and gradually whisk in flour and cajun seasoning over medium heat in a medium saucepan.
  2. Cook and whisk constantly for approximately 3 minutes.
  3. Gradually whisk in hot water and then milk.
  4. Add Worchestershire sauce and continue to whisk.
  5. Once texture of sauce is smooth and creamy, slightly thickened, begin adding cubed cheese, alternating between Velveeta and cheddar.
  6. Stir CONSTANTLY with a wooden spoon until all cheese is melted and sauce is thickened and bubbly.
  7. Meanwhile, cook and drain macaroni according to directions on box.
  8. Stir into cheese sauce and heat through.
  9. Add salt and pepper to taste.
  10. Serve with a nice green salad and garlic toast.
