Thai Lime Pork with Noodle Salad

Ingredients

  • 500g pork fillets
  • 3/4 cup KRAFT FREE* Thai Lime & Coriander Dressing
  • 200g thick rice stick noodles
  • 150g snow peas
  • blanched and shredded
  • 100g bean sprouts
  • 1 red capsicum
  • sliced
  • 1/2 cup roughly chopped mint
  • 1/2 cup roughly chopped coriander

Instructions

  1. Marinate pork in 1/2 cup dressing for at least 30 minutes in the refrigerator.
  2. Cook thick rice stick noodles according to the manufacturers instructions.
  3. BBQ or char-grill pork until just cooked, rest in aluminium foil for 15 minutes, slice thickly.
  4. Combine rice stick noodles, snow peas, bean sprouts, capsicum, mint, coriander and remaining 1/4 cup of dressing.
  5. Serve topped with the pork.
