Ingredients
- 2 cups instant couscous
- 4 tomatoes
- chopped
- 1 bunch cilantro
- 12 onion
- chopped
- 14 cup fresh lime juice
- 3 jalapenos
- seeded and de-veined for less heat
- 1 tablespoon garlic powder
- 2 teaspoons cumin
- 1 teaspoon salt
- 12 teaspoon pepper
- 3 cups chicken broth
Instructions
- In a blender or food processor, blend tomatoes, cilantro, onion, lime juice, jalapenos, garlic powder, cumin and salt and pepper.
- Cook couscous according to package directions and use chicken broth instead of water.
- When the couscous is done, mix 1 cup of the fresh salsa into the couscous.
- Salt and pepper again to taste.
- Add more or less of the fresh salsa according to taste.
