Tazukuri (Dried Simmered Sardines) for Osechi

Ingredients

  • 50 grams Dried young sardines (or anchovies)
  • 1 Roasted sesame seeds
  • 2 tbsp Sugar
  • 2 tbsp Mirin
  • 1 and 1/2 tablespoon Soy sauce

Instructions

  1. Dry roast the dried young sardines over low heat for about 10 minutes (until they are crisp).
  2. Transfer to a colander to strain to remove the broken bits.
  3. Boil the seasoning ingredients; at first, tiny bubbles will form.
  4. Boil until large bubbles start to appear.
  5. Turn off the heat, add the dried young sardines, then coat in the sauce.
  6. Transfer to a tray lined with parchment paper, sprinkle on some toasted sesame seeds, then serve.
