Swiss Vegetables Au Gratin Recipe

Ingredients

  • 2 tbsp. butter
  • 2 tbsp. minced green onion
  • 2 tbsp. flour
  • 1/4 teaspoon celery salt
  • 1/2 c. lowfat milk
  • 1/2 c. chicken broth
  • 1 teaspoon lemon juice
  • 1/2 c. shredded Swiss cheese
  • 2 tbsp. minced pimento
  • Warm cooked liquid removed broccoli flowerettes
  • sm. whole carrots
  • and sm. whole onions

Instructions

  1. Don't preheat oven.
  2. In saucepan, heat butter.
  3. Add in green onion.
  4. Whisk in flour, celery, and salt.
  5. Cook 1 minute.
  6. Add in lowfat milk, broth, and lemon juice.
  7. Cook till thick and bubbly.
  8. Stir in shredded cheese till melted.
  9. Stir in warm vegetables and pimento.
  10. Pour into casserole.
  11. In small bowl, combine topping ingredients and sprinkle over casserole (I make double amount of topping).
  12. Bake in 350 degree oven, uncovered, for 30 min.
