Ingredients
- 12 cup peanuts (honey roasted good)
- 2 sweet potatoes
- peeled (I dont always peel)", "salt, to taste", "12 cup butter, melted
Instructions
- Preheat oven to 475.
- Process peanuts in food processor until fine but not powdered.
- Transfer to a bowl.
- Slice potatoes 1/8th inch, dip in melted butter.
- Arrange on silpat lined baking sheet.
- Sprinkle peanuts on top.
- Bake until the tops are lightly browned and potatoes are tender, about 15-20 minutes.
- Watch to prevent burning.
- Transfer to paper towel and drain.
- Salt to taste.
- Cool 5 minutes.
