Ingredients
- 1 Sweet potato (medium)
- 100 grams Enoki mushrooms
- 1 tbsp Mayonnaise
- 1 tsp Oyster sauce
- 1 tsp Soy sauce
Instructions
- Cut the sweet potato in half lengthwise then slice into 5 mm slices.
- Soak in a bowl of water for 10 minutes.
- Drain, cover loosely with plastic wrap and microwave for 3 minutes at 500w.
- In the meantime, combine the ingredients.
- Cut the enoki mushrooms in half and shred.
- Heat a pan with 1/2 teaspoon of oil and add the sweet potato and enoki mushrooms.
- When the enoki mushrooms have wilted, add the other ingredients.
