Sweet Potato and Enoki Mushroom Stir Fry with Oyster Sauce and Mayonnaise

Ingredients

  • 1 Sweet potato (medium)
  • 100 grams Enoki mushrooms
  • 1 tbsp Mayonnaise
  • 1 tsp Oyster sauce
  • 1 tsp Soy sauce

Instructions

  1. Cut the sweet potato in half lengthwise then slice into 5 mm slices.
  2. Soak in a bowl of water for 10 minutes.
  3. Drain, cover loosely with plastic wrap and microwave for 3 minutes at 500w.
  4. In the meantime, combine the ingredients.
  5. Cut the enoki mushrooms in half and shred.
  6. Heat a pan with 1/2 teaspoon of oil and add the sweet potato and enoki mushrooms.
  7. When the enoki mushrooms have wilted, add the other ingredients.
