Ingredients
- 1 medium carrot
- diced
- 1 medium onion
- diced
- 1 medium potato
- diced
- 1 medium cooking apple
- diced
- 2 tablespoons oil
- 2 garlic cloves
- crushed
- 1 tablespoon curry powder
- 300 ml tomato juice
- 1200 ml vegetable stock
Instructions
- Heat oil and saute apple and vegetables until the onion is transparent.
- Add garlic and curry powder and cook for a further 2 minutes
- Add all liquid and simmer for 30 minutes.
- Liquidise and reheat if needed.
