Ingredients
- 4 regular flour tortillas
- 2 cups shredded monterey jack and cheddar cheese blend
- 4 tablespoons thick & chunky salsa (preferably roasted vegetables)
- 4 tablespoons mayonnaise
- 1 tablespoon cayenne pepper
- 12 tablespoon garlic powder
- 12 tablespoon paprika
Instructions
- heat skillet on medium heat.
- place one flour tortilla in the skillet and add 1/2 cup of cheese to the tortilla.
- let cook unfolded for about 5-6 min or until cheese is completly melted.
- while cheese melts mix the mayo, cayenne pepper, garlic powder and paprika together in a small bowl.
- once cheese is melted spread 1 tbls of salsa and 1 tbls of the mayo mixture in the quesadilla.
- fold and let in cook for another minute fliping it after 30 seconds.
- repeat with the next 3 quesadillas.
- serve with prepared yellow rice or enjoy as is.
