Summertime Couscous Salad

Ingredients

  • 2 1/4 cup chicken broth or water
  • 1 cup large couscous
  • 1/2 tsp olive oil
  • 1/2 tsp salt
  • 1 can chick peas (drained)
  • 3/4 cup diced green bell pepper
  • 3/4 cup diced red bell pepper
  • 1/4 cup red onion chopped
  • 3 green onions chopped
  • 1/2 cup cilantro chopped
  • 1/2 tsp hot pepper flakes
  • 1 Dressing
  • 1 tsp honey
  • 3 tsp olive oil
  • 1 Juice of one large lemon
  • 1 salt and pepper to taste

Instructions

  1. Bring broth or water to a boil.
  2. Add couscous, olive oil and a dash of salt.
  3. Simmer 10-12 minutes.
  4. Turn off the heat when almost all the broth is gone.
  5. Cover with lid.
  6. Couscous will absorb all broth.
  7. Combine cooked couscous, chick peas, peppers, onion, green onions, cilantro and hot pepper flakes.
  8. Whisk together honey, olive oil, lemon and salt and pepper to taste combine with couscous mixture.
  9. Enjoy!
