Ingredients
- 1 box Couscous
- 1 cup Frozen Peas
- 4 Tablespoons Olive Oil
- Divided
- 2 cloves Garlic
- 1 whole Zucchini
- Quartered And Chopped
- 1 cup Toasted Pecans
- Chopped
- 4 ounces
- fluid Feta Cheese
- Ground Red Pepper
- to taste
- Ground Black Pepper To Taste
Instructions
- 1) Follow the directions on the box of couscous, adding the frozen peas to the water, seasoning package, and 2 tbsp.
- oil.
- 2) Saute the garlic in remaining 2 tbsp.
- olive oil, then add the zucchini and cook until golden.
- 3) In a large bowl, combine the couscous, peas, zucchini, pecans, and feta cheese.
- Season to taste.
