Sugar-Free Banana Cake Made with Shio-Koji and Amazake

Ingredients

  • 2 Bananas
  • 80 grams Amazake
  • 2 tsp Shio-koji
  • 1 tbsp Vegetable oil
  • 100 ml Additive-free soy milk
  • 150 grams White flour
  • 1 tbsp Baking powder (aluminum-free)

Instructions

  1. Mash the bananas in a bowl.
  2. Leave some lumps if you prefer the texture.
  3. Mix in the amazake, shio-koji, and other ingredients in the order listed.
  4. If possible, sift in the dry ingredients.
  5. Mix gently without over mixing, pour into a parchment paper lined mold and shake from side to side to even out the batter.
  6. Bake for 25-30 minutes at 180C.
  7. Top it with whipped cream to taste.
  8. The whipped cream shown in the photo is a banana cream made with shio-koji and amazake.
