Ingredients
- 4 oz Cream Cheese
- softened
- 4 tbsp Ricotta Cheese
- 20 large Pitted Green Olives
- 4 slice Proscuitto
- 1 tbsp Minced Garlic
- 2 cup Oil for frying
- 1 cup Panko Bread Crumbs
- 1 Egg
- beaten
Instructions
- Preheat oil in shallow pan for frying, to 350.
- Finely chop Proscuitto in food processor and then place in a small mixing bowl.
- Combine cream cheese, ricotta and garlic in food processor and pulse until smooth.
- Combine cheese mixture with proscuitto.
- Rinse olives of any brine and pat dry.
- Place cheese/proscuitto stuffing in a piping bag and stuff the olives.
- Roll stuffed olives in a beaten egg and then dredge in panko.
- Drop olives into oil for 2-3 minutes or until golden.
- Drain on paper towels.
- Serve topped with freshly grated parmesan cheese.
