Ingredients
- 2 14 cups all-purpose flour
- 2 12 teaspoons baking powder
- 12 teaspoon apple pie spice
- 12 cup butter
- softened
- 23 cup sugar
- 2 eggs
- 13 cup half-and-half or 13 cup light cream
- 14 cup orange juice
- 1 teaspoon vanilla
- 1 12 cups chopped strawberries
- 2 teaspoons finely shredded orange rind
- 34 cup butter
- 12 cup sugar
- 1 egg yolk
- slightly beaten
- 1 teaspoon vanilla
Instructions
- Preheat oven to 350.
- Grease and flour a 6-cup fluted tube pan; set aside.
- In a bowl, combine flour, baking powder, spice and 1/4 teaspoons salt.
- In a large bowl, beat butter with an electric mixer on medium to high speed for 30 seconds.
- Add sugar; beat until combined.
- Add eggs, one at a time, beating well after each addition.
- In a bowl, combine half-and-half, orange juice and vanilla.
- Alternately, add flour mixture and juice mixture to egg mixture, beating on low speed after each addition just until combined.
- Fold in strawberries and orange peel.
- Spoon batter into prepared pan.
- Bake for 50 minutes.
- Cool in pan on a wire rack for 10 minutes.
- Remove, cool slightly.
- Serve warm.
- If desired, serve with Butter sauce.
- To prepare Butter Sauce: Heat 3/4 cup butter over medium-low heat until melted.
- Remove.
- Stir in 1/2 cup sugar; add 1 slightly beaten egg yolk.
- Cook and stir just until thickened and starting to bubble.
- Stir in 1 teaspoon vanilla.
- If desired, strain.
