Ingredients
- 3 big potatoes
- 500 grams frozen spinach
- unthawed
- 1 glug good quality olive oil
- 1 salt
- 1 ground black pepper
- 1 italian seasoning
- 1 pinch chili powder
Instructions
- Peel and dice your potatoes.
- Put them in a big pot, completely submerged in cold salted water.
- Bring to a boil.
- Cook for about 15 minutes
- Then add your frozen spinach to the pot and bring back up to the boil.
- Cook for about 7 minutes
- Take off heat and drain.
- Season with salt, pepper, chili powder, a glug of olive oil and italian seasoning.
- Blend the spinach and potatoes into a creamy puree.
- Serve warm
