Spinach Puree

Ingredients

  • 3 big potatoes
  • 500 grams frozen spinach
  • unthawed
  • 1 glug good quality olive oil
  • 1 salt
  • 1 ground black pepper
  • 1 italian seasoning
  • 1 pinch chili powder

Instructions

  1. Peel and dice your potatoes.
  2. Put them in a big pot, completely submerged in cold salted water.
  3. Bring to a boil.
  4. Cook for about 15 minutes
  5. Then add your frozen spinach to the pot and bring back up to the boil.
  6. Cook for about 7 minutes
  7. Take off heat and drain.
  8. Season with salt, pepper, chili powder, a glug of olive oil and italian seasoning.
  9. Blend the spinach and potatoes into a creamy puree.
  10. Serve warm
